Made in the traditional method onsite and aged on its lees for approximately three years. Made by getting the hand picked bunches into the winery from vine to press within the hour, fermenting slowly in stainless steel and resting on lees to mellow before racking, filtering and bottling.

Appearance: light, slightly golden with fine bubble and rich moosé
Tasting Notes: The palate is fresh with a bright streak of citrus fruit, lemongrass and baked apple, with a strong persistent fizz which leads to a refreshingly dry finish.
